Christopher Kimball recently spoke to GOURMET INSIDER® about the growth of ethnic cuisine and how the blending of different ethnic ways of preparing meals is changing the face of cooking in general.
Kimball said that when he first began in the industry, there was American food and ethnic food. Now, he noted, that with the growth of global influences on the food market being seen both in restaurants and at home, the lines are blurring.
“What’s happening now is that instead of thinking about our food versus their food, it’s just food,” he said.
Kimball discussed some of the hottest cooking trends he has seen recently and what will continue to be popular in the next year.
