Cangshan Cutlery Company has debuted the Thomas Keller Signature Collection of knives exclusively at Williams Sonoma. The cutlery is available online and in select Williams Sonoma stores.
The cutlery is made from Swedish Damasteel RWL34 Powdered Steel, a fine grained, high alloy steel that the company said is known for its edge strength, hardness and corrosion resistance. After an ultra precise six-stage heat treatment, the knives have a Rockwell Hardness Rating of 61 +/- 2, which means they can take a sharp edge, the company noted.
“I am very humbled and honored that Chef Keller chose to work with us to create this extraordinary line of knives,” said Henry Liu, president of Cangshan Cutlery Company. “Chef Keller and his team and the Cangshan Cutlery team should be very proud of what we were able to accomplish together. It was a lot of work to get here but the passion and integrity of every team member shine through in these knives. This is just the beginning of what we believe will be a life-long partnership.”
The Thomas Keller Signature Collection of knives was a 2019 Red Dot design award winner.
