Shun Blue knives feature a carbon steel cutting core sandwiched between two layers of stainless steel for easier maintenance. The initial blade shapes in the new collection are traditional Japanese shapes: a 6-inch honesuki boning knife, all-purpose 4-inch and 10-inch kiritsukes and the 7-inch menkiri noodle knife. A mirror-polish finish enhances stain resistance and the Blue knives feature traditional Japanese handle styles.
